The Art of Masa
Join Life & Thyme for an intimate, hands-on workshop celebrating the rich traditions and culinary heritage of heirloom corn and handmade masa. Led by Chefs Jesús “Chuy” Cervantes and Hector Luis Luna of Enrique Olvera’s Damian, this immersive class will guide guests through the storied history and cultural significance of corn in Mexico—a cornerstone in Mexican cuisine.
Participants will learn about the importance of heirloom corn varieties, the ancient practice of nixtamalization, and how this essential technique transforms the humble kernel into masa. Under the chefs’ expert guidance, guests will roll up their sleeves to craft their own tortillas from scratch.
To conclude the workshop, guests will be treated to a variety of taco fillings prepared by the team at Ditroit Taqueria, perfectly paired with the freshly made tortillas.
